Purple Potato

Purple Potato Papyrus
     

    The purple potato proved to be a disappointment.  The resulting papyrus was stiff and fragile, and as can be seen in the image to the left, the pieces fractured.  It seems that the product was too high in starch content.

    In this experiment. the slices were stored in the refrigerator for a month and then pressed.  It is possible that the slices of potato would produce better result and need a more definitive test.
